Which one would you go for? Which is most suitable for a decent road bike, a Rib Cage Pro or an Alloy Cage? The mass doesn't appear to be listed for the latter.

Am I correct in thinking that one of those small bottle-holder bags would fall right through a Rib Cage (which hasn't a bottom strut)?

I have 2 of those specialized rib cages.... mainly because it looks cool on my bike. I've haven't had them long enough to review for durability (3 months)

Will the ones without a bottom (only a small lip) hold non-rigid objects such as those bags designed to be placed in bottle-cages?

If you look at the one I linked, the clip at the bottom is the bottom. The bottle rests on that clip, which is part of the piece that holds the cage to the bike with the bolt attachment.

I see the clip, but I question whether it's enough to support something with flexible walls (e.g. a bag, not a bottle).

I have had good like with the Trek version of those....they are plastic and have lasted a season so far without a problem...i really like them!

Roland-

Go with a traditional looking cage if you are going to put one of those bag thingys in it. They have a more substantial frame at the bottom to keep your stuff yours. Then again, you could just use a small seat wedge and your jersey pockets for your stuff, and put a BOTTLE in the cage.
