I bought some off of craigslist and they are disgustingly dirty around each moving part. Greasy and grimy. Is there any way to clean them, or dismantle them?

DO NOT try to disassemble STI shifters. They are nearly impossible to get back together.
For good results use WD40 and some paper towels.

+1 on both suggestions. Do not make any attempt to disassemble them and use LOTS of WD-40 to flush away the dirt from both the exterior and interior parts. Then shake or air-blow them dry and lube with Tri-Flow or similar light oil.

Use the little straw attachment on the WD-40 can, the blast is very poweful.

I found removing the cable helps, as well as the cylindrical piece the cable sits in. I had a minor crash about a year ago in which the right brifter ended up getting impacted into some dirt. I used tons of WD40 to clean the thing originally, and got it working reasonably well. When I replaced the cable months later I took the opportunity to clean it while I had the thing opened up, and I was able to get a bunch more crud out.

Disassembly is not recommended. I tried once, just out of morbid curiosity - it took half an hour to work out where the spring should go, and another 1/2 hour to find a way to hold it in the right place as the cover went back on. Never again, and I'm pretty good at this kind of thing.
Clean what you can with WD40 or lighter fluid and Q tips, used sparingly. Then re lube sparingly with light machine oil or similar.
