I put a 8speed shimano barcon on my 7-speed and set to friction it works quite well.

Rivendell.com has some useful info on barcons.

I picked up a new set of Ultegra 8-speed bar end shifters on Ebay. It indexes perfectly with my older Shimano 7 speed cassette.

Fixer: So how does that work do you just get a 'blank' click at the top end???

NO.....that extra click is eliminated because the derailleur cable will not allow you to go any further past the 7th click, when set up properly. When initially setting up, just make sure the first click is indexed to the smallest cog and go from there....

I'm using old SunTour bar-end shifters with Campy 9-speed on my 'cross bike. Works great.
