I read many threads on the conversion from old 27" wheels to 700C. So, i allready know that i have to put a long reach break.

The 700 wheelset that i look have a 100mm front spacing and 120 mm rear spacing. I measured on my bike and i found a rear spacing of 125mm so i assume it will fit, but for the front i have a 97mm spacing.

Can i stretch a bit the fork to make it fit the wheel, or i have to replace it?

It'll stretch. I had the same issue with the fork on my '73 Raleigh.

it'll stretch as long as it's steel (aluminum is not as forgiving). the front fork will definitely be fine, the rear chain and seat stays will be fine as well, but if it still worries you, you can get a couple 3mm spacers and throw them on the rear axle
