Are you up for some climbing? Lots of great roads around there.
How about up Empire Grade road to the Ice Cream Grade / Felton Empire intersection, then either left on Ice Cream Grade to Pine Flat / Bonny Doon / Hwy 1 and loop back to campus, or right on Felton Empire to 9 and loop back to campus.

Are you a student there? I am dropping my son off this Thursday at the UCSC Stevenson College, a month before classes start for sports tryouts. He's a freshman there this year and he'll be trying out for the water polo team.
Anyway, he's bringing his road bike but he's not a cyclist. He just rides with me once in a while to keep his legs in shape for WP. When I visit him again in September, I'm bringing my road bike and by then I am hoping he's had a chance to explore some routes.
Up Empire Grade to the Lockheed-Martin gate, then turn around and head back down.

No, I am not a student there. I think UCSC has a cycling team, if he is interested.

The Bonny Doon loop would be about 26mi/2400ft, the Felton loop would be about 20mi/2500ft. I'm guessing either loop would be an hour and half or less.
UCSC south entrance to Lockheed and back would be about 35mi/4100ft.
