so if i got the dos eno freewheel of 17-19 teeth...I have an old ultegra 6500 crankset (53-39), could i take off the front ring and put on a smaller ring and use it in conjunction with the dos eno freewhell? If so, what is the biggest chain ring i could use on the outer?

55 tooth seems to be the biggest I can find, though I seem to recall seeing a 56 tooth before. FYI, those big rings do not come cheap: http://www.universalcycles.com/shopping/product_details.php?id=16094&category=2629

Re-reading your post, it's unclear if you want to know what's the biggest or smallest ring that will fit your crankset. Smallest is a 38 tooth, limited by the 130mm bolt circle diameter.

i wanna know whats the biggest ring size i can use if i dont want to move the wheel...for example..i want to keep my 39t ring and use that with the 19t cog. so what size ring do i need to use the 17t cog? Do you have to have the same number of teeth or something? So...like 39-19 would be a total of 58teeth. so would it be 55teeth = (size of big ring) - 17tcog...so the big ring would be 41t?
