I looked everywhere in User Control Panel and did not see where I can update the text beneath my avatar. Right now it just says "Senior Member".

Go to your User Control Panel and click on "Edit Your Details" in the menu on the left, it's the first thing listed under "Optional Information" as "Custom User Title".
