There isn't a reliable method to run V-brakes with STI/Ergo/Double Tap levers. The cable pulls are mismatched.

Beyond that, well set-up cantis provide plenty of braking power for 'cross. Once you can skid/break a tire loose from the surface you're riding, the limiting factor in brake performance is the tire, not the brake.

Pro for cantis:
1) Best mud clearance (besides discs, but discs have their own issues too, and aren't allowed in UCI-sanctioned cross races).
2) They work
3) No long sustained descents in cross, hence no need for ultra-burly brakes

Anti
1) They squeel

Some folk are moving to mini-V brakes, but those have even less clearance than regular Vs. In a race with sticky, fibrous mud, the clearance issue could make a significant difference.
