so I just learned what the mm numbers refer to when shopping for replacement rings, but can someone tell me if a new "9 speed" chainring will still work when the rear shifters are older 7 speed?

Do I need to look for 7 speed models?

Welcome to BikeForums! If you are talking about just replacing a single chainring, there is no problem. The individual chainrings on a 9-speed crankset may be just a little thinner, but this should not be a problem. Chainring spacing does not seem to be as critical as rear cog spacing. I am using Dura Ace 9-speed STI shifters with the original crankset on my Bianchi that was a 12-speed (2 front/6 rear). I did have to replace the front derailleur to get the proper movement, but the crankset works fine.
