I'm about to do my first century Saturday and would like to know what foods to avoid prior to the ride (1-2 days).

Anything that you have bad history with? Other then that, just stick to your regular routine. Maybe up your carbo hydrate ratio slightly.

Anything extra spicy ... and liverwurst. Oh wait, that's no liverwurst before a TT, it might be OK before a century.

If you are lactose intolerant avoid milk products. I can handle a small amount of milk but it is a bad idea before riding. No matter.. I am giving up on the stuff soon. Not even lactaid helps me anymore. *sigh*
I suppose I could try lactose free milk.
Prune smoothies. Definitely don't have a prune smoothie the night before your century.

If it leaves early (7amish) I usually don't eat anything before, sometimes I'll eat a Bagel or something if I think there will be a decent amount of waiting til I'm on the bike and moving. Usually though I don't eat until ~20 mins into the ride (Sustained Energy or some such).
Basically other than that I keep my eating habits pretty much the same..

Don't do any corned beef hash. That didn't work for me once. Must have been the grease.

I've (and others) found that it really doesn't matter what you eat before the Century, so long as it's not something that your stomach may not appreciate. Sometimes I have rice and meat, other times (like now) I'd have cereal. I performed (relatively) the same in both scenarios.
Just make sure you stay away from the sweet stuff that's given during the Century. I don't quite know why suppliers keep putting donuts, cookies and other sorts of foods like that for a ride like this. Those will surely put your stomach through hell; I've been there!
Immediately prior to the ride, avoid bulky foods like dense protein, meat, etc. 1-2 days prior, I make it all about complex carbs, and some veggies. Perhaps even a supplement just to make sure you're all set on your vitamins, which are essential for various metabolic processes. Stay hydrated, and remember that carbs are the body's most efficient source of fuel.
The night before my most recent Century, I ate some pasta. Tried to go to bed early(that didn't work out)
I had Cherrios before left at 4:30 am. the Ride started at 6. In the first 15 miles, I had to use the bathroom very badly(if you know what I mean). After that I refueled with Cliff Gels, Bananas, Water and bars...they also had PB&J at every stop. I made it through no problem. Very little energy loss.
