I've got set of these that I use as crit wheels, but I'm getting some DV46's so I was thinking about using these as my cross wheels. Think they'll hold up?

Yes.
I'm assuming you're talking about the pre-Aeolus wheels, the Race X-Lite Carbon Aero? They are actually a deep dish carbon wheel, not a carbon hoop with a non-structural fairing tacked on later, and are exceptionally strong.

i usually see deep wheels used in mud. you got any mud out there in texas?

They will definitely hold up. Deep dish are great for mud as they tend to shed the mud off and it's harder for clumps of grass to hang on and build up in your spokes.
