Now I'll admit I'm a n00b when it comes to road bikes; I know that they come with relatively weak brakes vs cantilevers or MTB V-brakes.

The least favorite component set on my new '03 Lemond Tourmalet are the no-name brakes. Braking was scary on my 1st ride out last week, close to a 30 miler, and it also seemed like quite a bit of pad material are deposited on the Matrix Aurora rim.

How much of the braking performance can be cleaned up by a pad change? Would I see significant gains by going to a 105 or even Ultegra setup?

Shimano 105 dual pivots have very strong, stiff arms and are very powerful. I changed from cheap Weinman single pivots to the dual pivots, and was really impressed. In my experience, they are as powerful as cantelever brakes, and more controlable .

If you want really good brakes, Campagnolo are the king (apparently). But 105 and some good pads (and well-lubed smooth running cables) should make a world of difference.
