I like TN719 built up with DT Super Comp spokes 3X to whatever hubs you want.

This guy has MegaKnowledge on 29er wheels!

That's a pretty tall order. Crossmax 29 is a super bomber, lightweight wheelset. That being said, I'd start with Salsa delgado 29 rims- burly as hell, not too heavy.
