Is there some special technique to remove and put back on the rear wheel off the Dahon D7? Each time I do it, it is always a frustrating and messy experience . Does the chain need to be handled in a certain way?

As you get more familiar with taking your wheel on and off, you shouldn't have to touch the chain all that much. When you do, use a cloth or paper towel. Do you regularly clean your chain? Cleaning your chain regularly can help out, but even if you do, it can be a messy experience.

Shift to highest gear.
Undo QR.
Pull derailer backwards while allowing wheel to drop down.
The last step is the crucial one, especially when putting the wheel back.

So the chain should be on the largest cog? I always had it on the smallest one ( gear 1 )!
Highest gear is smallest cog. :) "High" refers to gear ratio.
