I recently acquired a road bike that is nice and i want to keep it that way. mainly, I want to know what to regularly check and what to do less often. The bike is full campi with veloce rear der, and daytona front der.

you should have checked this out before you bought the bike;
campy veloce requires biweekly breakdown and rebuild...daytona twice that...good luck figuring out the spec sheets...they're all in italian

The first things you check out are a good repair/maintenance manual and the Park Tool web site.

Campy stuff is no more (or less) difficult to adjust or maintain than any other brand but you have to be familiar with how any of them work.
