Hi

I have a giant OCR1 2008 model and my LBS puts on a CX series

I'd like to use this bike and participate in the series the bike as 700 X 26 tires on it now but I'm' not sure how much bigger of a tire will fit and no one seems to make a 700X26 tire

where can I find how wide of a tire will fit or has anyone else used this type of bike and what tire did you use?

Check the clearance at the top and sides of the tires, to the brakes, the forks and the frame. I expect 28 mm will be the biggest it will take , but it might go to 32 mm.
