I am building a new bike, and need new cables. Any recommendations on brands? Should I go teflon coated or regular?

Are you running V's? The Avid Straight Jackets are nice as are the XTRs. A stiffer housing will give you MUCH better braking.

Yes, I am using v-brakes.

Then get XTR housing.
