Here's my build diary so far.

I have these items being shipped from the States:
Surly Crosscheck frameset ($361 delivered)
Shimano 105 FC 5600 w bb ($99 delivered)
Shimano 105 10 speed cassette ($52 delivered)

And I am picking up the rest of this here:
Shimano 105 rear der ($55 local)
Shimano 105 front der ($36 local)
Shimano 105 10 speed chain ($25 local)
I do have a number of other parts that are lying around for this build, but I don't have shifters. What would be the best shifters? I was thinking about the Shimano ST 5600. Could I use Ultegra 10 spd? Any help would be great.

Unless you are willing to go SRAM I think you are locked into Shimano unless you go Campy with a JTek converter. Last I saw Nashbar was blowing out Ultegra shifters for $150US

That's with the Triple shifter. The double is $333.

You can run triple shifters on a double just fine. The throw for each shift is the same so you will just not be using one of your clicks.

man... this is CX.. no one uses the front derailleur. j/k. I know that is a dumb statement.

Get whatever is cheaper...then if you dump the bike and the sti breaks, you won't be too pissed.

Barcon and friction ftw! But that's just me.

or just get 105/ultegra/DA if you can get it for cheaper

you might also want to add inline or barrel adjusters for your brake cables if you're going to use cantilevers with shimano levers.

I bought some Ultegra's off Ebay for cheap. I have to go into the field for a week, so no riding, buying, or looking at this board.

Suntour Command shifters, the best shifters ever made. They should be on every bike, every build.
