I actually have two quick questions

I'm looking at a wheelset that has a flip flop hub with fixed gear on both sides.

is there any way to put a cog on without a lockring and run one side as freewheel singlespeed?

Also, are the cogs on a 6 speed casette the same as one you would by exclusively for fixed gear?

Yes. I'm told they thread right on.

No, you need a track cog.

A freewheel cog does not require a lock ring. You can spin it on a fixed side of the hub no problem.
