Me, baked potatoe (quartered)
I eat more than one thing on long ride ... long rides last several hours ... entire days.
My snack list (not including the meals I eat on long rides):
-- cookies
-- pastries
-- salted almonds
-- beef jerky
-- potato chips
-- bananas
-- orange juice
-- granola bars
I rarely eat energy bars anymore ... and only eat gels in emergency situations.

bagel sandwich filled with a mixture of 10% peanut butter and 90% honey, plus some raisins if I have any. two are good for a century.

I can't eat anything that's going to just lay there and slow me down, so I opt for the more digestible sugars:
CLIF Shot Blocks, Potassium, Calcium Pills
If I'm hurting or doing the ride on less than 2 hours sleep, then ginseng tablets, 5 hour energy and a half Panadeine for the pain

I hate that "one thing" comment... but here goes:
Beer Nuts.
Now, if I had choice, I'd also list granola... a great source of energy and easy to pack. Breakfast cereal also makes a good on the road snack. On a whole day ride, I usually stop for food rather than just pack a snack.

I've done 120 mile rides with 10,000' of climbing that lasted from dawn to dusk w/o eating anything solid. This is what I used (see blue box titled "Secret Formula"):

I used to eat figs but found them to be very dry. I use little debbie fig newtons...not as dry. Excellent snack and carb food regardless!

What junk? As for carbs, umm on longer rides you kind of need them. Unless you enjoy passing out on the side of the road.

So-called "junk food" is the best stuff for long distance cycling!! Why? Because it contains carbs for quick energy, and fat ... fat is a slow-burning fuel that can keep you going, and going, and going, and going.
There ain't no way I'm giving up my "junk food"!!

I'm an adherent of the Zone Diet that recommends carbs and protein eaten together, so I can't list one item, but one combo that's good for long distance rides for example, is an apple and a small handful of walnuts. On a long ride, say about 70 miles, I take four different combos.

One thing? That makes it tough since what I want varies from day to day. But for a typical 3 to 4 hour weekend ride, 2 or 3 of the following:
- banana
- bag of raisins
- fig newtons
- PB&J
- Clif Bar (oatmeal & raisin, of course)
- bag of almonds
- Nature Valley granola bar

Seriously, this combination is the best for your body.
Start your ride with fresh fruit, as it enters (and exits) your bloodstream the quickest. Later on, go for the fats - Larabar, nuts, etc. Fats take a lot longer to break down, and stay in your bloodstream for a while.
Eating fruit after your fats during exercise is not good for you. Here is what will happen:
- the fruit gets stuck in your bloodstream, as the fat coats your sugar receptors
- your adrenal glands are called upon to produce excess amounts of adrenaline to trigger more insulin to break down the sugar (your normal amount of insulin will be used to break down the fats)
- the extra adrenaline, in addition to the sugars, produces an intense sugar high (think of the sugar high little kids get), and, you guessed it, an intense crash

Regarding the post about Fig Newtons being dry......try the Paul Newman Fig Newmans.
I usually toss a couple fig newmans in the back of my Jersey. If the Fig cookies are good enough for Lance they're good enough for me.

Sometimes fig newtons but my absolute favorite is nutter butter cookies. If they are good enough when you give blood they are good enough for cycling

BTW, Clifbars are made with all natural and organic ingredients, doncha know. And, there's nothing un-natural in any of the Hammer products, either, AFAIK.
And, I don't bonk. That's cool!

clif bar and a handful of dried fruit keeps me going for a good 60 miles. Anything past that and I need a whole lot more food since "stored calories" tend to get empty around here.

+1. I used to pin a sandwich bag into a jersey pocket and fill it with these. My fav solid food for rides along with bananas. I also like gels and diluted sports drink.

There are so many Kangaroos down here that I just grab one by the tail when I'm hungry, rip it's head off, hook into a bit of hind leg, then throw the rest of the carcass into the outback for the crows to finish
But seriously, I usually carry a spit-roasted animal of some sort, taped to my top tube

Sometimes, I cut an apple or pear in half, gouge out the core, fill with peanut butter and reseal the fruit, yummy.
Also, raisins and nuts mixed would be one snack.
Stollen is another.
Pretzels are a favorite. Get the ones with little or no fat. A traditional pretzel
has no fat.
