Hey. Can anyone tell me whether Hwy 160 from Red Rock towards Pahrump is flat-ish or super hilly? I'm looking for an easier route to introduce a few friends to distance cycling... I need about 80 moderate miles.

You have a mountain to cross between the road leading from HY 160 (Blue Diamond Road to the locals) to Red Rock on the Las Vegas side and the Pahrump valley. Once you are over the hill, it is relatively flat all the way to the end. It is pretty steep but if you have been able to do the Red Rock loop, I'd venture you could do the ride. The downside is you have to climb it again on the way back. You are looking at a couple thousand feet climb in just a few miles.

I wouldn't call that route "easy" at all nor flat. The climb to the top of Mt. Potosi, up to the little place called Mountain Springs is a tough 10 miles. Heading into Pahrump on the other side of the climb there are several spots where there is no shoulder. Traffic can be pretty sketchy at times, in fact there is a section of 160 that has unofficially been named the "widowmaker".
