I am currently running a 12-25 8 speed cassette on my 'cross bike. I am upgrading my road bike so I will have enough 9 speed parts from that bike to "hand-me-down" to my 'cross bike and make it 9 speed. The only thing I am lacking is a 9 speed cassette. My question for you is: Can I simply add a cog to my 8 speed cassette? And if so, where in the stack should I place it? Thanks in advance.
I don't think the 8 speed cassette will work with a 9 speed chain and chainrings as the 9sp stuff is narrower than the 8spd stuff. You might have to buy a new cassette. If it does work, I would add a 14 cog so you get 12,13,14,15,17,19,21,23,25.

Nope. The spacing is different. If you got a bunch of 9-speed spacers it might work, but usually the smallest two cogs have built in spacers so shifting would be a bit compromised on those cogs. I recommend getting a 9-speed cassette.

9 speed and 8 speed cassettes are the same width, the 9 speed has narrower cogs and narrower spacing. What you are proposing is impossible. FYI: the new Shimano 10 speed uses the same cassette width as 8/9 speed.
