Hey,
I'm just wondering can a front disc brake be fit on the rear with an adaptor of some kind? I can find so many cheap front hydro brakes but rears seem to be much more expensive. I realize you'd have to buy a longer hose but can it be done? I'm thinking specifically of shimano deore hydros (BR-M525).

Rear is more expensive because the have different adaptors and longer hose. Really there isn' technically any difference.
You will proberly also need a new leaver as it will come with a front side (LH?) brake lever.
I am not sure but I think the same caliper will fit on the rear mounts but it will require a smaller disk.
For example a no.3 hope mini caliper is the same for front and rear but fits a 185mm disk on front and 165mm rear. I would guess shimano are the same.
Add in the cost of a new lever, host, fluid and perhaps even a new disk or adapter and it will proberly be cheaper to get a rear in the first place.

Hayes have flippable levers. That should save money :)
my avid mechs are interchangeable f/r. i don't see why shimano's wouldn't be.
