I am going to go from caged to uncaged bearings for the headset on this 1988 Peugeot Triathlon (to fix the brinnelling). Can you tell me how many bearings I'll need and what size, or do I need to open it up to know that?

The only really sure way is to open it up. Measure the diameter of the balls you have and count the number of balls. Buy enough of that or those sizes, so that you have that amount for each bearing plus half a dozen spares each (it's real easy to lose a few in the "process"). There's a lot of good guidance out on the web as to how to count out the right number of balls for each bearing.
