well, the least most interesting would be someone who is still interesting, but not that interesting.

If you have a list of people, the top of which are the most interesting, the people at the bottom are thus the least most interesting, or more simply, the least interesting. You don't magically end up in the middle of the list. Those are the moderately interesting folks.
