My main bike is a 07 Gary Fisher Tassajara, 17.5 frame. I also have just rebuilt a 1996 Fisher 18 in' frame. I am finding even after replacing the 140mm stem with a 80mm and replacing the flat bar with one that has more rise, I am still bent over more than I feel comfortable with. So I have two ?'s
1. Where the 90's bikes ment to have riders more hunched over, I mean you look at the older bikes with those long stems. And if so why?? What is the purpose.
2.Is there any kind of add on product that I can buy to raise the stem up higher. meaning where the stem attaches to the fork,so I guess I am looking to make the fork tube higher if possible. If you look at the fisher archives, you can see there is a 2 in rise between the top of the headset and where the stem attaches.

If I can get even a 1 in rise it would feel much better on my back.
