If I charge a bunch of these cells how many days will they take [unused] to say discharge a significant amount?

Self-discharge is relatively insignificant for Li-Ion batteries, particularly as compared to NiMh batteries. You might lose 10-15% over the course of a few months...nothing to worry about.
