Hey,

So my rear wheel is sitting a little more than 1" from the inside end of the track ends on my bike - it's kind of close to the opening.

Is it correct to assume that removing one link from my chain will move the rear wheel in by 1/2"? I'd prefer to have the wheel sitting a little closer - right now it's a close to the openings of the track ends.

Yes, one link will move it 1/2". If that's too much, or not enough, you need to get a "half link". The half link will move it 1/4". Google "bike chain half link".
