I have a Rockhopper that I would like to install hydraulic disc brakes on. The frame is not set up, originally for disc brakes. Is it possible for me to add them (discs) to this bike?

Possible, yes. There are adaptors available that attach to v bosses.

You would need a place to mount the calipers on your fork and your NDS rear triangle and would want cable routing areas.

It's not economical.
You need a new wheelset with disc hubs.
You need a fork that has disc caliper mounts.
Assuming that your bike doesn't have chainstay caliper mounts you have to find some kind of adapter to do that.
You need the brakes, of course.
You will also probably have to kludge the cable or hydraulic hose routing to the rear brake.
That's a lot of stuff to have to buy. You'd probably be better off financially selling off your old bike and buying a new one that already has the brakes that you want. Of course, if you do it that way, you won't have the fun of figuring out how to do it and make it all work.
