cornbread is delicious....kind of wish I hate some right now.

Cornbread, sweet cornbread, mexican cornbread .... it's all good.
Cornbread mixed with whole kernal corn like my mom makes, has a sweet buttery taste. :love: I like hot water cornbread too but it can't be fried too long or it gets hard.

There is this place across the street from my place that grinds up jalepeno peppers in their cornbread mix and serves it with honey.
The real way to make corn bread is to grease a cast iron skillet and put it in the oven before you turn it on to preheat.
Once the oven is hot, pour your cornbread batter into the hot, greased, skillet.
It will make you cornbread so good, you will slap your momma to get to the last piece.
I don't have a cast iron cupcake pan.
Until you buy me one, I'll keep doing it my way.

:( Dutch Oven cornbread is the best.
I've never had a bad piece of cornbread. It's kind of like sex.

Go to a healthy-food type store. Get Red Mill medium grind corn meal. Follow the recipe for cornbread pancakes on the front of the package.
Mmm... you would be hard pressed to find a better vehicle for maple syrup delivery.

It might be an abomination, but have you ever had cornbread casserole?
1 can whole kernel corn, drained
1 can cream style corn
1 box of your fave cornbread mix
8 oz. sour cream
1 stick butter, melted (yep)
2 eggs
stir everything together (stir well)
pour in a 13 X 9 inch pan; no need to pre-grease pan (for obvious reasons)
bake in preheated 350 degree oven for 45 - 50 minutes
let cool
cut into squares (or dish up with a spoon - whatever)
Some variations use cheese.
Yeah, it's a heart attack in a pan.
BTW, +1 on the cast iron skillet method.

you need to add some fresh corn, cheese and minced jalapeno to the batter.
The only thing I like better than cornbread is more cornbread.
Goes great with beans and sliced jalapeno's.
