I just recently acquired an early '90s Bianchi mtb that I am currently flipping to a commuter. I want to attain a more aerodynamic and longer quill stem but am not sure what requirements my new stem must meet for my unicrown fork. The one thing I am sure of is that my current stem has a 25.4mm clamp. Any help and/or advice would be greatly appreciated.

For the most part any quill stem available will work. Something you have to think about though is how far into the steer tube your stem will be allowed to be inserted. If you have a short headtube then you might end up with too much rise for your aerodynamic goal.
