Touring - tandem ride from victoria bc canada to panama florida

We are thinking of riding from Victoria BC, Canada to Panama Florida and then up to Ottawa Ontario, Canada. Have an idea that we would head down the coast on Highway 1 all the way to San Deigo and then head west to Florida then north but not on coast more direct. Would miss most of the mountains by this route?. We are wondering if there may be other routes that are better or ? Time is not too much of a concern as we will be retired when we start trip. Any one out there done any part of trip or just general ideas. We will not be camping, plan on hotels, hostels or other means of accomaditon.

1. Highway 1/101 on the west coast is gorgeous, has relatively easy hills (by mountain standards), but is definitely not flat.
2. From San Diego to Arizona, there will be some real mountains to cross. Then heat. And lack of accomodations. I think this is part of the road where you definitely need camping or at least very good planning.
3. Going North, the "flattest" route would be along the coast until Virginia or Washington. BUt then, the nicest would be to ride as much as possible along the Blue Ridge Parkway or the old rural roads that more or less parallell it from Georgia to Pennsylvania.
