I'm heading down to NC this March for training during spring break, technically, I'll be a few miles north of Mars Hill, are there any recommendations for good rides around the area. I'm hoping to get a good 6 days of riding in while I'm down there.

Check out the Asheville Bicycle Racing Club site for rides. Do a search; tons of threads on western NC.

I've got a bunch of routes to ride now! Is there snow on Mt. Mitchell this time of year, or is it passable with bikes right now?

There is a good chance that snow is on the mountain. Even if not, the weather is risky up there this time of year. Another good route to consider is the Burnsville Metric (http://www.burnsvillemetric.com/) route. Its not far from where you are staying and, it is a very nice route.
There are also a bunch of routes in and around Asheville posted in the "cue sheets" section on the Blue Ridge website (http://www.blueridgebicycleclub.org/).

The weather has been fickle lately, even more so in the mountains. It would be very cold at higher elevation.

Sounds like I'll just have to try it on a nice day
