I've been looking to replace the mechanical disc brakes on my lower-end bike with hydraulics without sinking too much cash into a rig I'm going to replace fairly soon.

I'm thinking of picking up some calipers to pair with a new set of Deore XT ST-M765 integrated shifters/brake levers, but the M765 is a 9-speed shifter and my current cassette is 8-speed. Is there a reasonable way to cobble together this setup?

My rear derailleur is the black-bodied Deore LX M570, which I believe will work with either an 8- or 9-speed cassette, so if I need to upgrade the cassette it won't be too much trouble.

If you do go with the 9-speed integrated lever, all you 'll have to do is get a new cassette, which, as you said, isn't too much trouble.

Along with the cassette, the OP will also need a 9 speed chain. Then he'll be golden.
