Just wanted to give my 2cents and my experience with the z-pack. We're on a tandem tour down in Aussie, and had planned to do some hikes along the way, including the Overland Track in Tassie which we completed a few days ago.

I've met a few other touring cyclists along the way doing similar adventures, and we've found the z-pack to be great for this kind of thing. It's very light (lighter than the ortlieb backpack system), comfy, waterproof, tearproof, etc... Anyway, just wanted to share this with others... and see if there are other people who have solved this problem in a better way.

I'm not associated with them or anything, but I think it's worth a look... especially for those planning to do some hike&bike trips... I found them as I do a lot of ultralight backpacking (thru hikes) as well, and figured the cycle touring community might enjoy this product.

Panpacks (http://www.panpack.com/) makes convertible panniers. I have no experience with them.
