Pretty simple and quick question.

I've been around bicycles since I was four, racing bmx, freestyle, fixies, etc... The one thing I've been interested in for the past year has been long distance riding and centuries. My roommate is willing to sell me his 05/06 (forget which) Trek F70 for $550 which has been ridden 50 miles in the past 2 years, he wrecked it and got it fixed at a shop and hasn't ridden it since. I just checked craigslist and there is someone selling an '08 Bianchi Via Nirone Sora for $585 that's been ridden "45 miles since last summer... pristine condition."

Which would suit me better?

The Felt (not a Trek since Trek didn't make a f70 but Felt did) will have better Shimano 105 rather then the Sora the Bianchi has, but the Bianchi looks nicer. BUT, you really should ride both to see which one fits you best. Componets are not a big deal as long as you like the frame, you can always upgrade components as they wear out.
