I'm no expert as far as nutrition goes but this is what I'd say:
Yea, eat it plain -- but put a little salt on it. That'll help you with water retention during the race.
I think you're supposed to eat something like an hour before heavy activity, so that'd be a safe bet at the least.
Sorry I couldn't be of more help, good luck!

Afraid few of us are really knowledgeable..I know what seems to work...Just like when they told you when we were kids, don't eat within 30 minutes of swimming...
Well, 30 minutes seems to be enough digestion time that you do not feel weighted down by food..I would guess 30 to 60 minutes.
I usually ride after breakfast..eat, get ready for the ride usually 30-45 minutes later..I usually feel ready by then.
At that hour, I usually have steel rolled oatmeal, cold cereal, or cream of wheat..Toast does not seem too heavy..
Think spaghetti would have similiar demands.

For some reason I can't eat the pasta sauce, including spaghetti sauce, even two days before a hard ride w/o paying the consequences. I always get terrible indigestion if I do. A high carb meal is usually eaten by the pro's prior to racing. Never eat a big meal less than 4 hrs. before the race.... Any fat you eat will be converted into energy, as long as you ride or race within 2 - 3 hrs.
