If you visit your LBS (local bike shop) you can have them order a 7-speed trigger shifter. I'm assuming she currently has a grip shift system.
Mail order companies generally do not have 7-speed stuff.
If you do want to upgrade her to 8-speed, honestly, you'd be better off financially buying her a new bike. Yep, it'll cost THAT much.

If a Kona cindercone or wild old bike, $200 to go 9 speed. (not shure how much$)
Maybe.
The 7speed rapids may be plastic casing but cheap. SHHHHimano.
I believe an LBS is better, start the conversation 'Do you have any old 7speed shifters. Old stock, never mounted. Boy that stuff hasn't been used in years!
Get a good deal.

Thumbs up = good
Next step = butt down!
IOW, get HER to test ride some new bikes.
It isn't a deal if it doesn't fit!

Just get a cheap 8 speed shifter. Use it on a 7 speed cassette and you just end up with an unused shift. It was a pretty common setup when decent 7 speed shifters started to get hard to find.
