Hello. What should be an average daily calorie intake during training/racing season? I know in with my experience, if I intake around 1500 cals. per day, training 4 times per week, I start loosing too much weight and then I put it back on too quickly in the off season. I am 5 '8" ~157 lbs.

It varies person to person. However, while training my calorie intake is closer to 3000 and I can not maintain my weight.
Today I rode an obnoxious 50 miles in winter conditions and even at 3000 calories I am not eating enough.
My off days are around 2000.
I am 5'9" and 150lbs ish.
You could figure out your base calories needs at thedailyplate.com and then determine a rough estimate of how much was used in a workout. That should give you an idea of how much you should eat. Mind you this is an estimation not an exact number.
If you actually want to train to get stronger and do well you have to eat enough to support that. If you don't eat enough and your body has to eat itself, it's not very productive.
