I am giving my tandem a Spring clean. I have a Da Vinci drive with an eccentric with pinch bolts. I presume the purpose of lubrication is to prevent the unit seizing as it doesn't move when adjusted. Any recommendations on what lubricant to use? I also am looking for a recommendation for lubricant for the dual freewheel assembly. This clearly has a different function as it is in constant motion. Any thoughts?

For the eccentric bolts you should use anti-seize such as copperslip or standard heavy bike grease if you prefer. For the eccentric outside I personally don't use anything as it needs to grip the housing and it's aluminium to aluminium on mine so no significant corrosion issues.

For the freewheel internals you need a lighter grease, otherwise the pawls won't grip. There are probably some proprietary greases but I use Pace fork grease, which is much lighter than Shimano grease or similar. It also does not attack rubber seals. In an emergency I would thin down some car grease with ordinary engine oil for this, but you may as well use the proper stuff.

For the Bushnell eccentric in your daVinci tandem Phil Wood waterproof grease, a synthetic or similar will do. Instructions for installing your new Bushnell eccentric

1. Before installing your bicycle bottom bracket into
the eccentric, remove the retaining rings (photo 1),
clean and liberally grease all the aluminum surfaces
that will be touching each other. Grease the wedges,
bolt, the outside of the eccentric, and the threads with
high-quality grease (figure 2 and 3). Then grease the
inside surfaces of the frame’s bottom bracket area
(figure 4). When reassembling the eccentric, make
sure the rounded edges of both wedge pieces mate
with the rounded edges of the internal surfaces.

It's all pretty straight forward, e.g., single speed freewheel maint for the internediate shaft's counter-rotating single speed freewheels and then light oil on the cassettee freehub.
