I bought a new chain a while back, but threw out the box it came in. I want to know if it is a 1/8" chain or not. How does one figure this it. It is a Shimano IG 8 speed chain.

Is not 1/8". Only track chain 1/8". This is road chain.
No 1/8" chains are also used on BMX, Crusiers, SS MTB's, Fixed Gear etc. 3/32" are typically used on geared bikes.

So a 3/32" chain and a 1/8" cog can't be used together, correct?

Correct. The chain won't be wide enough to settle between the teeth of the cog.
