I think they are foldable so you don't always have to use a lock. How often you have to use one depends on how well it folds.
In a sense, any bike with quick release wheels is demountable, but that doesn't mean you're going to take them off every time you bring it indoors.

If I'm just gonna sit in a table at a sidewalk cafe or a resataurant where I can see out a window, I'll just cable lock my folder to a nearby sign or lightpost. Otherwise it's folded up in my room.

No I wouldn't store it like that and that looks like folder abuse. If my Flying Pigeon could be folded and rolled like the Bromptons and Stridas, I would take it everywhere with me. As it is, it's easier for me to just cable-lock it to something and step inside for a little while. It's not too heavy but it is a little awkward to carry around.

I always have a lock on me (Kryptonite Evolution Mini). The one or two times that I don't, I'm going on a straight-up tour and not stopping for anything so no need to bring a lock.
The beauty of a folder is to have the OPTION of taking it with you, basically, anywhere you go. You don't always have to fold it and take it with you. If it's really crowded, regardless of if the bike is folded, it can get really dicey carrying or wheeling around your folder, trust me.

My Bike Friday never comes in with me if it needs to be folded, it's too much of a pain in the ass to deal with. That's one of the downsides of the Friday, for sure.

With those baskets on the back, it wouldn't even be possible to fold that bike.
