Hey, I'm from the U.S., and I toured the west coast of Ireland by bike a few years ago. There are plenty of hostels, and let's not talk about pubs. I toured in April and stayed in B&B's that were very reasonable during that time of year, but on all my other trips I stayed in hostels. There's are several pubs in every little town. Stay on the west coast; it's beautiful!:beer:

I haven't been over to Ireland with a bike so the only advice I can offer is if you're near Cork go for Beamish (or Murphy's if you must), if you're near Dublin go for Guinness. :)
On a less serious note though ;) I'm currently reading 'Round Ireland in Low Gear' by Eric Newby, and I highly recommend it. Probably the funniest cycing book I've read since 'French Revolutions', and you never know it might have useful advice in it.

Suggested reading material for your trip: "The Third Policeman" by Flann O'Brian.
If you are going to the NE because of the ferry connection, check out the Ryanair website. They always seem to have stupid deals, and fly to Cork and Shannon. No problem taking a bike with them.
Ive cycled from Cork around to Tralee, and its a great place to tour.
