Mountain - Plains - Utah: Routes around St. George?

Will be there second week in May with my road bike and was wondering if anyone knew of some routes around the area. Looking for something in the 2 hour range from my near downtown hotel as that's about all the time I'll have each evening.

Ride over Red Hills Parkway, cross Bluff Street and it becomes Snow Canyon Parkway. Make a right into Snow Canyon State Park and climb to the top. Make a right on Hwy 18 and take that all the way back into St. George (18 becomes Bluff St). That should take you just about 2 hours, or less if you're fast!
