Just looking at the map, it looks like once you get out west, you don't have much choice- there's just not that many roads that go to El Paso.
You might post in the Texas forum, see if anyone there has any ideas.

Go up on Adventure Cycling's web site.....got to the Southern Tier route.....on their route, there is a leg to Austin....heads south of Austin, over to Del Rio, then up to El Paso....
or just take the Interstate....
