I got a flat yesterday after patching a flat that looked like a snake bite (two identical punctures on opposite side of the tube). Is this from the tube pinching? The LBs told me to always pump the tube up, then let air out, then pump again to avoid this. Is there anything else I can do? Or was this caused by something else?

This was most likely caused by you not having enough pressure in your tires so when you hit a bump, the tire compressed all the way down to the rim and the edges of the rim cut into the tube.
