My front wheel makes a new humming sound which I believe is coming out of the hub. I have 5-6k miles on those hubs and did nothing to them. Are the bearings serviceable? do I need to re pack them with grease? Is this something I can do my self? Do I need special tools?

The bearings are sealed so pretty much all you can do is replace them (assuming this is newer 105 stuff... the early stuff may not have had sealed bearings). If you pull the hub apart its pretty straightforward but not something I recommend unless you have the tools (15 & 17mm cone wrenches, I believe) and the know how... you can definately make things worse if you rebuild the hub incorrectly.

Try putting a drop of silicon lubricant on the seal where the axle exits the hubshell.

How old is "old"? my bike is a Giant OCR 1 which was new is 2001.. Are my hubs considered new? I.E, sealed bearings?

I believe in 01 they were roller ball and 600 was sealed catridge.

According to my latest Shimano catalogue, all hubs use cup and cone bearings. Do Shimano make cartridge-bearing hubs? They have labyrinth seals, but these are NOT sealed industrial cartridge bearings, like you find on some hubs.

Practically all shimano hubs appart from the low end ones are sealed.

If they are cartridge bearings you can still service them. Carefully prise out the rubber seals with a small screwdriver or knife blade. Then use degreaser to clean out the bearing. Then just apply some grease, a grease gun makes this a lot easier. After that just push the seals back in.

they are all serviceable cup and cone type. check the hub for adjustment; there should be just the tiniest bit of play in a qr hub. do you have a new front tire as well? a new tire might make a low humming noise you're not used to.

if these don't check out you should probably contact whomever you bought it from. you should have to service a brand new hub.
