Riding Death Ride and flying into Sacramento ... and hoping for suggestions of great bike shop(s) that can tune (and, hopefully not, repair if need be) what the airline might have done to the bike in transit.

I like Bikes Plus in Folsom. Mikes Bikes in downtown Sac pulled me out of a crunch once though, so I'm happy with them too.

Davis Wheelworks in Davis is a full on race shop (http://www.daviswheelworks.com/). Check out their site. Nothing but higher to high end road bicycles. Great mechanics as far as I can tell. Well worth the trip as it's just out of Sac on the way to San Francisco.
If you are totally east, then as mentioned above, Bikes Plus in Folsom is also a good one. http://onlinecycling.com/

How much time will you have between hitting the ground and starting the ride? A lot of LBS' are busy right now.
One I'd throw out, with great, super friendly and helpful mechanics, and that is just a few minutes from the airport, is Natomas Bike Shop (http://www.natomasbikeshop.com). They helped me out quite a bit on my singlespeed, and have been fixing my bikes for a while now. They're literally right off of the freeway. Their shop looks a little iffy (appearance-wise) but their staff is awesome. I love that place.
Mike's Bikes is also a good one but they're downtown. I haven't had any work done there in a while. If you want one in Auburn, which is off 80 and on the way up to Tahoe, you can check out Bicycle Emporium (http://www.bicycleemporium.com). If you're going up 50, Bicycles Plus in Folsom would be great too.
