i just had a great salad. it was spinach with beets, hard boiled egg, celery, union, and raspberry vinigeratte dressing. I then thought hey, who else has an awesome basic salad to share? this is the official salad sharing thread, where anyone with the most proposterous salad can share theres. so go ahead, share your awesome recipes! here are 2 of mine

1. spinach, beets, mango, bleu cheese, and pear any dressing

2. spinach, onion, bacon, turkey, and sweet corn. no dressing

I eat tons of salad. The best purchase I ever made was a salad chopper and wooden bowl set from bed bath and beyond. Interested in hearing all the different recipes.

After a long ride i love (its not really healthy but this is my "splurge" salad)

1 head romaine
black olives
mushrooms
feta
hardboiled egg
ceasar dressing

My typical salad includes:


Spinach
Kale
Tomato
Red Bell Pepper
Broccoli
Squash (yellow summer and/or zucchini)
Feta cheese
Walnuts


One protein source (usually about 100 grams worth):


Tempeh (fermented soy - an awesome meat substitute)
Salmon burger (from CostCo)
Chicken
Ground Turkey
Tuna


Optional ingredients

Frozen peas
Olives


Homemade salad dressing...equal parts of each:


Oil (olive and/or grapeseed)
Balsamic Vinegar
Red Wine Vinegar
Dijon Mustard


Spices (all ground fine):


Basil
Oregano
Rosemary
Thyme
Turmeric
Peppercorns
Brown Sugar


I typically make two salads at once - one for right then, and one in a container that I take to work for lunch the next day.

I'm not sure how many "servings" of veggies this represents, but guess it's around 5 or 6, at least.

I like basic: greens harvested from the garden, mushrooms, tomatoes, homemade crutons, low fat Italian dressing. Tomatoes will be from the garden when they're ripe.

Careful with that - only 2 tbsp of dressing would add 120 calories to your salad.

Same for the dried cranberries - they're yummy, but have 130-140 calories per 1/3 cup.

My favorite as of late:

Mixed greens:kale (~3:1)
Carrots, raw, shredded
Broccoli, raw, chopped
Macadamia nuts, raw
Pecans, raw, soaked

Dressing depends on what I'm feeling when I make it.

Another favorite:

Spinach
Kale
Tomato, sliced
Cucumber, sliced
Flaxseed-almond raw burger patty, crumbled
Olives (usually don't add these, but they work well with this salad)

Dressing: tomato-basil, homemade

Super easy salad:

raw beets, shredded
raw carrots, shredded
kale, massaged, chiffonaded

Dressing: a little balsamic vinegar, a little hemp oil (the juice from the beets does well to keep the salad moist with minimal dressing).

Iceberg lettuce, zuchinni, cucumbers, onions, any other veggies I have in the fridge.

Dressing:
Fage Yogurt, and salsa
OR
Shredded eggs, and soy sauce
OR
Soy Sauce, and Dijorn mustard

Also, I often eat romaine lettuce and kale leaves with a bit of mustard, and sometimes with no mustard. Romaine and Kale by themselves have great flavor.

One of my favorite snacks, though definitely not a low-calorie one, is romaine lettuce with ranch dressing. Awesome.

There's a Japanese salad at a restuarant I really like called spiny tuna salad. A bunch of raw tuna, covered with a spicy japanese sauce, and some avacado slices. Mmmmmm.

I probably use overall 1 tbsp dressing so that's not too bad, but I suppose I could make the dressing 1/3 olive oil, 2/3 balsamic and give that a try.

I didn't know that the cranberries had so many calories. I don't use anywhere near a 1/3 cup but a small handful which probably still adds 40 or 50 calories. I'll have to keep an eye on that.

grilled jerk chicken
mexican blend cheese
red leaf lettuce and/or chopped cabbage
red bell peppers
red onion
no salt taco chips
diced jalapeņos
Casear dressing

if you aren't sweating while eating, add more peppers

Hm, never thought of jalapenos in a salad. Think I'll try it, as I love peppers and spicy foods.

I wish my job had an onion.

Special rice salad, based on a recipe from Kenny Shopsin:

Put a scoop of brown rice in a bowl. Add chopped raw and cooked vegetables in about an equal amount. Put some melting cheese on the top and a few toasted walnuts. Microwave just until the cheese melts. Stir it all together. Use a little soy sauce as a dressing.

The salad I usually make for lunch or dinner:

Romaine lettuce
Raisins
Tuna (if I'm eating this for lunch or post-ride)
One slice of American
Walnuts or Almonds
Corn
Mushrooms (if any)
Balsamic Vinaigrette dressing

For me, this is a REALLY good salad. For comparison purposes, I used to eat:

Romaine lettuce
Bacon
Chicken
Corn
Mushrooms
American cheese
French dressing

The new salad tastes SO much better than what I ate before, and is probably a ton more nutritious for me to boot.
