You may have already researched this link. On my project, correct installation of the couplers were not the difficult part, the re-paint was a problem.

Not personally but I bought my (not SandS) bike from The Bicycle Outfitter in Los Altos - they used to be a shop with a strong touring focus, and I know they had some coupled bikes in the shop. They changed hands a few years ago and I don't know if they are still in that market.
